Grapes: made mainly from Sangiovese and native varieties.

The result of a meticulous hand selection of grapes, it ages for 14 months in large oak barrels, in full respect of Paolina’s tradition. It shows an intense ruby red color, deep and inviting. On the nose, it reveals ripe cherry aromas intertwined with warm notes of black pepper, leading to a rich and engaging tasting experience. On the palate, it is full-bodied and enveloping, driven by mature, flavorful tannins that accompany a spicy and persistent finish.

Awards: this wine has received numerous accolades from top critics and prestigious international competitions, including Luca Gardini, Decanter, Falstaff, The WineHunter Award, James Suckling, Intravino, and AWC Vienna, recognizing its excellence and authenticity.

Perfect pairings: excellent with aged cheeses, red meats, Tuscan cured meats, and braised dishes. With aging, it expresses its best qualities alongside structured first courses, such as penne with wild boar ragù or with truffle.
